Mimi's Spring Salad

Ingredients

Salad

  • 1 package Spring Salad Mix
  • 2 cups Chopped Kale
  • 3 Celery Stalks (sliced )
  • 1 Small Green Pepper (sliced)
  • 1 Cucumber (sliced)
  • Tomatoes (sliced)
  • 1 Purple Onion (sliced)
  • 1/4 cup Feta Cheese
  • 1/4 cup Parmesan Cheese

Dressing

  • 1 Packet Good Seasons Italian Dressing
  • 1/4 cup Red Wine Vinegar
  • 1/2 cup Olive Oil
  • 1 tbsp Garlic Powder

Instructions

  • Make the dressing a day before serving!
  • Follow directions on the Good Seasons Italian Dressing packet, subsituting red vinegar for white and olive oil for the vegetable oil.
  • Add garlic powder to dressing and refrigerate overnight.
  • Toss all salad ingredients in a salad bowl and top with dressing when ready to serve.
