The question of “what’s for dinner?” can feel like such a chore day in and day out, so I’ve started sharing our own real-life weekly menu filled with simple, weeknight dinner ideas in this regular series. If you’re in need of easy dinner recipes, this week’s simple dinner ideas are full of some good ones! See below for all of my (Shannon) ideas, notes, and links.
For reference, this weekly menu fed my family of 4 (3 adults + 1 preschooler).
SUNDAY
Slow-Cooker Italian Sausage & Parmesan-Panko Crusted Zucchini

- It does not get easier than slow-cooker sausage! We like to cook with Rao’s Homemade Vodka Sauce and pair with a side of veggies. For the zucchini, I chop in half and then quarter each one, dip in olive oil and then coat with a mixture of grated parmesan, panko breadcrumbs and salt and pepper. Bake at 400F for about 15 minutes until golden brown. *Keep an eye as timing may vary. Can also broil for a couple minutes at the end for a more golden crust.
MONDAY
Takeout from Cava

- I only have one Mediterranean recipe I love to make, so for the most part, we opt to order takeout when we’re craving Mediterranean food. If you haven’t had Cava, consider this your sign to try it!
TUESDAY
Chicken Fajita Tortilla Bowls


- This Half Baked Harvest recipe has become a household staple. To save time while prepping this meal, mix your dry ingredients and chop your veggies ahead of time. The best part is filling your bowl with as much of your favorite toppings as you like.
WEDNESDAY
Angel Hair with Spicy Shrimp & Asparagus

- I originally found this recipe from Real Simple and made it even simpler as I’ve prepared it over the years. Cook pasta according to package. Heat 1 Tbsp of olive oil and 1 Tbsp of butter in a pan. Add 2-3 cloves of garlic. Add the shrimp and season with salt and red pepper flakes. Simmer until shrimp are opaque. Add 1 Tbsp butter and toss in pasta. Add more olive oil if desired.
THURSDAY
Slow Cooker Mongolian Beef & Green Beans

- This was the first time I made this recipe from Ryan’s Slow Cooker Meals and everyone went back for seconds! I will definitely make this recipe again. I cooked the green beans in some leftover chicken broth and it was pretty tasty.
FRIDAY
Steak Fajitas, Chicken Tortilla Casserole and Rice at Mimi’s
- Mimi treated us all to dinner for Cinco de Mayo and it did not disappoint. You know it’s a good week when Mexican is on the menu twice.
SATURDAY
Slow-Cooker BBQ Chicken & Corn on the Cob

I will forever make Clean Food Crush’shomemade BBQ sauce for any barbecue recipe. Pair with Easy Chicken Recipes’ Crockpot BBQ Chicken recipe and you have yourself an easy and delicious dinner!
