
I had this idea to start sharing what our family is eating during the week in hopes it will help you come up with the answer to “what’s for dinner?” because it can feel like such a chore. Now this is a regular series! Below is the full list of what we ate (no, I don’t cook every night) along with recipe sources, recipe notes and anything else I feel might be helpful to you. I’m planning to make this a regular feature so stick around if you need some simple, weeknight dinner ideas. I’m also sharing my videos from these dishes over on our Instagram if you’d like to see how they look in real-life.
There are two reasons to love the menu this week:Â 1.) It has several tried-and-true tasty recipes from Mimi and Nana and, 2.) There is minimal effort needed!
For reference, his menu fed Shannon’s family of 3 (2 adults + 1 toddler) and then some! Every single recipe makes for delicious leftovers for lunch or another meal when you don’t feel like cooking.
SUNDAY
Nana’s Meatballs on Hoagie Rolls

- This recipe will never disappoint. This week we enjoyed them on hoagie rolls but Nana’s Homemade Italian Meatballs also pair well with pasta, or mixed with lasagna or baked ziti. Also love them as a pizza topping!
MONDAY
Turkey and Vegetable Skillet

- Found this recipe on Recipe Runner. I really liked how light it was and you could add whatever veggies you have on hand! Next time I won’t drain the fire roasted tomatoes to make it a bit more juicy and see how we like it.
TUESDAY
Nana’s Taco Soup

- I’m pretty sure we comment how EASY this recipe is every time we make it. Also, it’s so fun to go as crazy as you want with the toppings! We usually set all the toppings out and everyone can add as little or as much as they like.
WEDNESDAY
Cream Sun-Dried Tomato Pasta with Caesar Salad

- Pretty sure I’ll be making this one from Platings + Pairings again because Bobby has brought it up several times. This has a rich flavor and works as a main dish or a side dish.
THURSDAY
Mimi’s Meatloaf, Baked Potatoes & Green Beans
- Mimi made dinner this night and served her famous meatloaf.
FRIDAY
Ate out
- We visited the neighborhood where our shop will be located and enjoyed dinner out per our usual Friday night ritual. Max may or may not have still managed to get his fries for Fry-day.
SATURDAY
Shredded BBQ Chicken, Corn on the Cob & White Cheddar Mac ‘n Cheese

- I made homemade BBQ sauce for the first time, and it’s going to be hard to buy the jarred stuff again. Found a tasty homemade recipe via Clean Food Crush that doesn’t call for corn syrup and followed Easy Chicken Recipes’ Crockpot BBQ Pulled Chicken for the main dish. Will definitely be making again!
