The question of “what’s for dinner?” can feel like such a chore day in and day out, so I’m sharing our own real-life weekly menu filled with simple, weeknight dinner ideas in this regular series. I’m also including kid-friendly alternatives / serving recommendations this week for the little ones when we make accommodations for them (let us know what you think!). And, just like the other menus, I’m sharing videos from these dishes over on our Instagram if you’d like to see how they look in real-life.
This week’s menu includes some of the easiest recipes you’ll ever make! Save these for extra busy weeks.
For reference, this weekly menu fed Shannon’s family of 4. No, we didn’t have another baby…Papito returned! (3 adults + 1 toddler)
SUNDAY
Korean Ground Beef Rice Bowls with Broccoli & Green Beans

- Papito returned from his travels! I wanted to make slow cooker sausage but we picked up groceries too late, so I made another favorite that can be whipped up in no time- Korean Ground Beef & Rice Bowls from The Recipe Critic. We ALWAYS double this one!
- Kid-friendly: Instead of serving mixed in a bowl, serve each item separately.
MONDAY
Slow Cooker Italian Sausage, Zucchini, Squash & Garlic Bread

- Since we didn’t get to have sausage on Sunday, I made it this night. No recipe required! Combine Italian sausage in slow cooker with your favorite jarred tomato sauce and cook on low for 4-6 hours until cooked through. We had zucchini and squash on hand so I tossed in some olive oil, butter and garlic and seasoned with salt and pepper.
TUESDAY
Crockpot Cilantro Lime Chicken Tacos & Yellow Rice

- Another slow cooker recipe with minimal ingredients. This is one of the most popular recipes you can find on the blog!
- Kid-friendly: Serve chicken as an entree with tortilla chips, guacamole/salsa to dip, cheese and rice as sides.
WEDNESDAY
Pork Chops with Mushrooms, Onions & Roasted Yukon Gold Baby Potatoes

- I took our busy day meal up a notch and cooked our pork chops with onions and mushrooms in the cast iron skillet. Not sure I can do it any other way now! Paired with Yukon gold baby potatoes roasted in the oven with olive oil, salt and pepper.
THURSDAY
American Goulash, Broccoli & Garden Salad

- Mimi treated us with her home cooking this night. This is one recipe we don’t have of her’s but we’ll have to get it!
- Kid-friendly: Set some pasta aside to top with jarred marinara or butter.
FRIDAY
Leftovers
- It was a long week and we had a big day ahead of us, plus lots of leftovers in the fridge!
SATURDAY
Chick-fil-A
- We spent the entire day at Bayhill for the Arnold Palmer Invitational and had lots to eat. Since we didn’t do our Fry-day tradition the night before, we grabbed CFA on the way home.
