
I had this idea to start sharing what our family is eating during the week in hopes it will help you come up with the answer to “what’s for dinner?” because it can feel like such a chore. Last week was my first post of this weekly menu series. So, below is the full list of what we ate (no, I don’t cook every night) along with recipe sources, recipe notes and anything else I feel might be helpful to you. I’m planning to make this a regular feature so stick around if you need some simple, weeknight dinner ideas. We’ve covered meal planning on the blog before, but this is how it looks for me and my family when I put our meal plan into action (I swear by my Day Designer for planning and you can order your own and save 10% with code DDAFFILIATE10).
Clearly I was craving potatoes when I created this week’s menu (not shown: my breakfast bowls with Yukon potatoes), so I ended up moving things around a bit to break it up.
For reference on portion sizes, we are a family of 3 (2 adults + 1 toddler).
SUNDAY
Nana’s Eggplant Parmesan & Chickpea Pasta
- We have this recipe on the blog but in all honesty, I never ever measure the ingredients. I think the key is frying the eggplant just enough before layering them with cheese and placing in the oven. This one never disappoints and we always get 2 eggplants so we have lots of leftovers!
MONDAY
Sweet Potato and Apple Sausage Breakfast Skillet
- I found this recipe on The Better Blondie while looking for breakfast ideas and we loved it so much, we make it for dinner often! Especially love it for leftovers.
- P.S. Always, always use fresh lemon! It makes such a huge difference.
TUESDAY
Mimi’s Meatloaf
- Originally had this planned for Wednesday but since our tacos called for sweet potatoes and Monday’s meal already featured them, I switched the days around.
WEDNESDAY
Crispy Chipotle Sweet Potato Tacos with Lime Crema
- One of my absolute favorites from Half Baked Harvest. It sounds complicated but it is so easy to make. The only chopping you have to do are the sweet potatoes and poblano pepper. I don’t eat beans so sometimes I add corn and Bob wants to try tofu. We use Primal Kitchen’s Mayo with Avocado Oil for the Salted Lime Crema. The fried tortillas are a must-have.
THURSDAY
Takeout
- I originally had a veggie sheet pan (this dish has red potatoes) planned but just wasn’t sounding good that night and we were both exhausted, so we ordered our favorite Picadillo from Cubans on the Run.

SATURDAY
Italian Sausage, Fried Onions & Corn on the Cob
- This was actually supposed to be brats, but I grabbed the wrong package out of the freezer and this is what we got. I didn’t use a recipe for this, I just pan fried the sausage with oil and sliced onions.
