How to Make Rosemary Pineapple Mozzarella Canapés

What You’ll Need
To create this simple recipe, you’ll need the following:
How to Prepare

In a cold frying pan, pour the olive oil in and add the rosemary. Turn the burner on to low heat. Allow the oil to heat up and as soon it begins to shimmer, remove from the heat and pour the oil mixture into a heatproof (non-plastic) bowl. Set aside.
Place the sliced mozzarella into a separate bowl and sprinkle with the red pepper flakes. Shake gently to ensure each slice has a few flakes on it, then set aside.
Place the frying pan back on high heat (no need to wash it) and add the pineapple slices in a single layer. Cook over high heat for 2 minutes then flip and cook on the other side for another 2 minutes. Remove the pineapple from the pan and place each in the warm rosemary oil. Set aside and allow to cool.
Cover the prepared cheese and pineapple and keep chilled until ready to serve. Remove from the fridge at least 15 minutes before serving. Place a slice of mozzarella onto each cracker. Top each with a piece of pineapple, and enjoy!

Ingredients
- 2 Tbsp Olive Oil

- 8 oz Fresh mozzarella (drained and sliced)
- 1/2 tsp Red pepper flakes
- 1/2 cup Pineapple chunks
- 12 Rosemary crackers
