Happy Friday friends! Yesterday we shared our RosĂ©, White and Blue Fourth of July Tablescape Inspiration, which we still cannot get enough of! If you saw it, you may have caught a glimpse of Mimi’s homemade dishes on the table. Today we are sharing the two recipes she made because you must give them a try this Summer! And if you’ve ever had Mimi’s cooking, you already know they’re good! Her New England Style Shrimp Rolls and Coleslaw are perfect to serve up this Fourth of July or any summer soiree you’re hosting while the weather is warm. We promise they won’t disappoint, and there will be plenty to share!
New England Style Shrimp Rolls
Ingredients
- 1 lb of cooked, peeled and deveined small shrimp
- 1/2 cup mayonnaise
- 1/4 cup chopped onion
- 1/4 cup chopped celery
- 1 tsp chopped tarragon
- 1 tsp chopped parsley
- Salt and pepper to taste
- White sub rolls
- Shredded lettuce
Directions
- Prepare shrimp, cook, remove tails and chop up.
- Mix all ingredients together.
- Season with salt and pepper to taste.
- Slice sub rolls 3/4 ways through.
- Line sub rolls with shredded lettuce.
- Spoon shrimp mixture into lettuce lined sub rolls and enjoy!
Mimi’s Coleslaw
Ingredients
- 1 package already chopped coleslaw mix
- 1/2 cup Half & Half
- 1/2 cup of sugar
- 1/2 cup mayonnaise (more if desired)
- 1/2 cup crushed pineapple (from can)
- 1/4 cup pineapple juice
- Salt and pepper to taste
Directions
- Mix together Half & Half, mayonnaise, sugar, crushed pineapple and pineapple juice.
- Season with salt and pepper to taste.
- Add chopped coleslaw mix and mix together.
- Refrigerate before serving and enjoy!
