Growing up, many special occasions were celebrated at Mimi’s. How to Make Mimi’s Egg Salad
What You’ll Need
To create this simple and delicious recipe, you’ll need the following:
How to Prepare:
Mimi's Egg Salad Recipe
- Large saucepan
- Spider strainer or slotted spoon
- measuring cups
- Chef's knife
- cutting board
- 1 dozen eggs, hard boiled
- 1/2 onion, chopped
- 1/4 cup sweet relish
- 1/4 cup mayonnaise (more or less to taste)
- Fill a large saucepan with enough water to cover eggs by an inch or two. Bring to a boil.
- Carefully add eggs to boiling water and lower heat to a gentle simmer. Cook for 13 minutes.
- While the eggs are boiling, chop the onion.
- When the eggs are finished cooking, place them in an ice bath for 5 minutes. Then, peel and gently chop eggs with a fork, knife or hard-wired whisk.
- Combine eggs, onion, and relish. Gradually add in mayonnaise to taste.
- Serve immediately or cover and chill until ready to serve.
