One of our favorites is her Egg Salad Recipe, so we knew we had to share it with you because it’s just too good not to!

How to Prepare Mimi’s Egg Salad Recipe

The Ingredients
With only four ingredients necessary, this recipe is a quick and easy go-to in both our homes! Keep in mind, however, that egg salad is often paired with croissants, white bread, crackers or other pairings, so you might want to add your favorite complementary component to your shopping list.

How to Prepare
Mimi’s Egg Salad is best prepared a day in advance to allow the flavors of each ingredient to blend together. To start, fill a large saucepan with enough water to cover the eggs by an inch or two. Bring the water to a boil, and carefully add the eggs with a spider strainer or slotted spoon. Lower the heat to a gentle simmer and cook for 13 minutes.
While the eggs are boiling, chop the onion and measure out the rest of the ingredients.
When the eggs are finished cooking, place them in an ice bath for 5 minutes. Then, peel and gently chop eggs with a fork, knife or hard-wired whisk.
From there, combine the eggs, onion, and relish. Then, gradually add in the mayonnaise to your taste and consistency preference.
Serve the recipe immediately or cover and chill until ready to serve.

- 1 dozen eggs, hard boiled
- 1/2 onion, chopped
- 1/4 cup sweet relish
- 1/4 cup mayonnaise (more or less to taste)
Instructions
- Fill a large saucepan with enough water to cover eggs by an inch or two. Bring to a boil.
