How to Prepare Your Mediterranean Cucumber Bites
Start with prepping all your ingredients, including peeling and slicing the cucumbers about a half inch thick. Then, create your hummus mixture by mixing the hummus with the Kalamata olives, grape tomatoes, and roasted red peppers. Add the lemon juice and salt & pepper and mix thoroughly. Use a spoon to top each cucumber slice with the hummus mixture. Complete this recipe by adding a small basil leaf to each cucumber bite.

Mediterranean Cucumber Bites
Equipment
- Peeler
- Cutting Knife
- cutting board
Ingredients
- 2 cucumbers, peeled and sliced
- 8 oz. classic hummus
- ΒΌ c. kalamata olives, diced
- ΒΌ c. red roasted tomatoes, diced
- ΒΌ c. grape tomatoes, quartered
- ΒΌ c. feta cheese
- 2 tsp lemon juice
- salt and pepper, to taste
- 1 sprig fresh basil leaves, for garnish
Instructions
- Peel and slice cucumbers, approximately Β½ inch thick.
- In a bowl, mix hummus, roasted red peppers, grape tomatoes, kalamata olives.
- Add lemon juice into hummus mixture and stir.
- Sprinkle salt and pepper into hummus mixture and stir.
- Using a spoon, top each cucumber slice with approximately 1 tbsp of hummus mixture.
- Top each cucumber bite with a fresh basil leaf.
