Without hesitation, she responded with, “taco soup!” Funny enough, that is one of my husband’s top requests when we visit as well, and we make it often at home because it’s not only delicious, but it’s also a super easy weeknight dinner recipe or perfect for a dinner party! However, if you want to get a little fancier with it, you can add in complementary ingredients to make this recipe look and taste even more like it was made from scratch!

Simple Version
In a deep pan or dutch oven, saute ground beef over medium heat until the meat is no longer pink, then drain. Add the taco seasoning, jar of chunky salsa and V8 juice to the pan and cook for about 10 minutes until heated through, stirring occasionally. Top with your favorite taco toppings and enjoy!
#HostfulHack: If you want to include chopped onions, peppers and tomatoes in your taco soup, use a jar of chunky salsa to save on total cost and preparation time.
Fancier Version
First, prepare your ingredients by chopping the onions and peppers. In a deep pan or dutch oven, saute ground beef, chopped onions and peppers over medium heat until the meat is no longer pink, then drain. Add the taco seasoning, jar of restaurant-style salsa and V8 juice to the pan and mix well. Add diced tomatoes, corn and sliced olives and cook for about 10 minutes until heated through, stirring occasionally. Top with shredded cheese, sliced avocado, tortilla strips and sliced limes and enjoy!
Easy Taco Soup
Ingredients
- 1 lb ground beef
- 1/2 cup onions, chopped
- 1/2 cup green peppers, chopped
- 1 packet taco seasoning
- 1 qt V8 juice, original
- 1 jar restaurant-style salsa (use chunky salsa to replace chopped onions, green peppers and diced tomatoes)
- 2 cans diced tomatoes, fire roasted
- 1 can corn, drained
- 1 (4 oz) can sliced olives, drained
Toppings
- shredded cheese
- avocados, chopped or sliced
- tortilla strips
- limes, sliced
Instructions
- Roughly chop the onions and peppers.
- In a deep pan or large dutch oven, saute ground beef, chopped onions and peppers over medium heat until the meat is no longer pink, then drain.
- Add the taco seasoning, jar of restaurant-style salsa and V8 juice to the pan and mix well.
- Add diced tomatoes, corn and sliced olives and cook for about 10 minutes until heated through, stirring occasionally.
- Spoon into soup bowls or mini dutch ovens and top with shredded cheese, sliced avocado and tortilla strips.
- Garnish with sliced limes and enjoy!
