First, if you have time, prepare this recipe a day in advance to allow the flavors of each ingredient to blend together. You will be grateful for the extra time to enjoy a delicious recipe with loved ones.
Second, don’t skip out on the relish and squeeze of lemon juice! The acidity of both ingredients will cut through the fatty mayo, adding a bit of zest to what may otherwise be something quite simple.
The Recipe: Nana’s Chicken Salad
Nana’s Chicken Salad Recipe
Equipment
- Hand mixer or forks
- Chef's knife
- measuring cups
- Mixing bowl
Ingredients
- 1 rotisserie chicken, cooked and shredded
- 1/4 cup mayonnaise
- lemon juice, to taste
- 1/4 cup sweet relish
Instructions
- Using a hand mixer on the slowest speed or two forks to pull apart, shred the rotisserie chicken.
- In a mixing bowl, combine the chicken and sweet relish. Gradually mix in the mayonnaise and lemon juice to taste.

The Recipe: Mimi’s Egg Salad
Mimi’s Egg Salad Recipe
Equipment
- Large saucepan
- Strainer
- Spider strainer or slotted spoon
- Bowl
- measuring cups
- Chef's knife
- cutting board
Ingredients
- 1 dozen eggs, hard boiled
- 1/2 onion, chopped
- 1/4 cup sweet relish
- 1/4 cup mayonnaise (more or less to taste)
Instructions
- Fill a large saucepan with enough water to cover eggs by an inch or two. Bring to a boil.
- Carefully add eggs to boiling water and lower heat to a gentle simmer. Cook for 13 minutes.
- While the eggs are boiling, chop the onion.
- When the eggs are finished cooking, place them in an ice bath for 5 minutes. Then, peel and gently chop eggs with a fork, knife or hard-wired whisk.
- Combine eggs, onion, and relish. Gradually add in mayonnaise to taste.
- Serve immediately or cover and chill until ready to serve.

Carrots are another hallmark of Easter. We love Mimi’s Cooked Carrots because the simple recipe creates for a stunning display on your table!
How to serve the carrots

Mimi typically serves her cooked carrots in a baking dish and serves them hot from the oven to the table. We’ve recently been charmed by the idea of a good Wooden Lazy Susan–like this one–and loved how it serves as the centerpiece of the table while serving our families.

Ingredients
- 1 lb Carrots
- 1 tbsp Butter
- Maple Syrup (to taste)
- Salt (to taste)
- Pepper (to taste)
Instructions
- In a pot, boil carrots for 10 minutes.
- Carefully transfer carrots to a large dish and immediately spread butter and maple syrup on them.
- Add salt and pepper to taste.
