While planning out the month of May in my Simplified Planner, I (Jenna) decided to follow Emily Ley’s suggestion of meal planning for the entire month by selecting our family’s favorite easy recipes for specific days. Planning the first week of May was the easiest because I followed a simple recipe: Eat out 1x a week, American on Wednesday, Italian on Thursday, Pizza on Saturday, and of course Tacos on Tuesday. To my surprise, Cinco de Mayo lands on a Tuesday this year, and there’s no better recipe to serve than our family’s favorite, Crock-Pot Cilantro Lime Chicken Tacos!

Crock-Pot Cilantro Lime Chicken Tacos
I found this recipe from Belle of the Kitchen many years ago while I was on the hunt for easy Crock-Pot recipes that involved little to no prep. When I tell you this recipe is easy, I mean it!
#HostfulHack: Always keep your pantry stocked with key ingredients for your family’s favorite recipes. For us, that’s Crushed Tomatoes, a Jar of Salsa, Chicken Broth, and French Onion Soup Mix.
Simply place chicken breasts at the bottom of a Crock-Pot and sprinkle taco seasoning on top of each chicken breast. Pour salsa on top of the covered chicken and top off with the juice of two limes and 1/3 cup of chopped cilantro. Cover and let cook on high for 4 hours or on low for 6-7 hours. That’s it! After shredding the cooked chicken, warm flour tortillas, and begin constructing your Crock-Pot cilantro lime chicken tacos by adding all of your favorite toppings! Garnish with cilantro and dig in!
Crock-Pot Cilantro Lime Chicken Tacos
Equipment
- Crock-Pot
Ingredients
- 2 lbs Chicken Breasts
- 16 oz Pace Mild Salsa
- 2 Limes
- 1 Packet of McCormick Taco Seasoning
- 1/3 cup Chopped Cilantro
Instructions
- Place chicken breasts on the bottom of your Crock-Pot.
- Sprinkle taco seasoning on top of chicken.
- Cover chicken with salsa, lime juice, and cilantro.
- Cook on high for 4 hours or on low for 6-7 hours.
- Shred chicken with fork and serve on warmed flour tortillas. Top with your favorite toppings and garnish with cilantro.
